Some restaurants you plan trips around. Others, your steering wheel turns for on its own. Fulin in Guanxi is the second kind — "every time I pass by, I make the detour to eat here" is something I have said for years, and it is still true.

Despite the name — Fulin "Hotel" — this is an old-school Hakka kitchen: no décor to speak of, stainless-steel tables and round banquet stools, just a small-town eatery. But the classics come off the wok exactly as they should, decade after decade.

Poached Chicken: Judge It by the Skin

Poached chicken

A Hakka table always opens with the chicken. The skin must be golden, glossy, faintly slick with its own fat; the meat firm and actually tasting of chicken. Fulin passes on all three. Two dipping sauces come alongside — a savoury soy blend and a golden kumquat sauce — and the kumquat's clean acidity lifts the meat's sweetness beautifully. It is the most Hakka detail on the table.

Hakka Stir-Fry: The Wok Test

Hakka stir-fry

Dried tofu, squid, pork and scallion over fierce heat — the Hakka stir-fry is every Hakka kitchen's final exam, because everyone can taste the difference. Here the tofu is seared until its edges catch, the squid stays crisp, the pork tender, and the whole plate breathes wok hei. Deeply savoury, and it demands rice from the first bite.

Pork Intestine with Ginger: Clean Work, Bright Acid

Pork intestine with shredded ginger

This dish lives or dies on preparation — intestine that is not scrupulously cleaned ruins the plate. Fulin's is crisp with a gentle chew and no off-flavours; white vinegar and ginger pull the richness into line. Sour, fragrant, snappy: all three boxes ticked.

Scallion Beef, and Stir-Fried Bone Marrow

Scallion beef

Scallion beef is a wok-heat dish — thick-cut scallions blistered first in the pan, the beef slices kept silky under a thin glaze of sauce. Another enemy of plain rice.

Stir-fried bone marrow

The stir-fried bone marrow is an old-school Hakka plate — soft, almost custardy pieces tossed with carrot and scallion, rich with gelatin, a texture you rarely meet on modern menus.

Stir-Fried Cabbage: The Honest Finish

Stir-fried cabbage

The final plate is cabbage — sweet, crisp, cooked just to the moment it turns tender. When the vegetables are still taken seriously at the end of a meal, the kitchen can be trusted.

Room & Service: Plain, But Full of Warmth

Let us be clear: there is no ambience here. The room is a small eatery's room, simply furnished. But tables, dishes and floors are kept spotlessly clean — stay for the cooking, skip it for the décor; this place has never sold the latter.

What wins the points back is the people. The owner is warm and attentive — and after a long absence, she still remembered us. Being remembered is the one thing no chain restaurant can copy. Small places hide their hospitality in exactly these moments.

Verdict

Fulin does not sell surprises; it sells certainty — "always that delicious." Chicken, stir-fry, intestine: the menu barely changes, and every dish stands above the line. Next time you pass through Guanxi, do not just pass through. Make the detour.
